QUINOA GREEN PEAS AND FETA SALAD

For a truly refreshing salad, go for fresh herbs.

Ingredients

  • 150g of feta
  • 200g of peas
  • 200g of flat green beans
  • 120g of cooked quinoa
  • 1 small red onion
  • 1 handful of shoots or young herbs
  • A few mint leaves
  • A few sprigs of parsley or coriander
  • 1 tbsp of seeds (sunflower, pumpkin or sesame)
  • For the lightened lime vinaigrette
  • The juice of 2 limes
  • 2 tbsp olive oil
  • 1 tsp of honey
  • 1 tsp mild mustard
  • Salt
  • Pepper

Preparation

  • Start by cooking the vegetables.
    Plunge the chopped peas and flat beans into a saucepan of boiling salted water for 5 to 8 minutes. Then immediately cool them in cold water to preserve their bright green color.

    Prepare the vinaigrette. In a bowl, mix the lime juice, olive oil, honey, and mustard. Season with salt and pepper to taste.

    In a large bowl, combine the quinoa with the green vegetables, sliced ​​red onion, fresh herbs, and sprouts. Crumble the feta generously over the top, then drizzle with the lime vinaigrette.
    Serve chilled and add a few seeds!
