SHRIMP SCAMPI

Serves: 6

Cooking time: 10 minutes
Totaltime: 15 minutes

May be served with angel hair pasta

Ingredients

  • ½ cup unsalted butter, cubed
  • 4 cloves garlic, minced
  • 1 medium shallot, diced
  • ¼ teaspoon crushed red pepper flakes
  • 1 ½ pounds medium shrimp, peeled and deveined
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley leaves
  • 1 tablespoon freshly squeezed lemon juice
  • 2 teaspoons lemon zest

Preparation

  • Melt butter in a large skillet over medium heat. Add garlic, shallot and red pepper flakes, and cook, stirring frequently about 2 minutes.
    Add shrimp; season with salt and pepper, to taste. Cook, stirring occasionally, until pink and cooked through, about 3-4 minutes.
    Stir in parsley, lemon juice and lemon zest.
    Serve immediately.
